Ingredients
red curry
- 10 g galangal
- 10 g kaffir lime leaves
- 1 lemongrass
- 10 g gingseng
- 10 g turmeric
- 1 tsp coriander seeds
- 10 g garlic
- 10 g shallot
- 12 dried large red chilis
- 2 coriander roots
for panang curry add
- 2 tsp peanut
for khan soi curry paste add
- 1 tsp curry powder
put all dried spices in a mortar and grind until they turn into powder form
add chili and pound until it gets small.
add the remaining ingredients and pound until the texture is smooth.
