Ingredients for 4 to 6 people
- vegetable oil for frying
- 900 g tender okra, trimmed and slit vertically
- 250 g plain yogurt
- 2 Tsp gram flour
- 3 Tsp mustard oil
- 1 red onion, chopped
- 3 cloves garlic, chopped
- 1 green chili such as serrano, chopped
- 1 tsp black cumin seeds
- 1 tsp ground turmeric
- salt to taste
- 2 fresh red chiles, halved
fry the okra in batches until cooked through, remove with a slotted spoon and drain the excess oil onto a paper towel.
in a mixing bowl, whisk together the yogurt and gram flour into a smooth batter and reserve.
smoke the mustard oil on which heat in a skillet and the reduce the heat to medium. add the onion, garlic, green chili, black cumin, turmeric, and salt to cook, stirring continuously until all flavors are well combined.
add the yogurt mixture and bring to boil. continue to cook until the mixture is smooth and thick, about 3 to 4 minutes.
serve with the okra, garnished with the red chilies.
